Spinach and other greens are widely available. The specific species grown locally depends on climate, elevation, and cultural preference. Spinach does not keep well without refrigeration, and should be purchased for use within a few days. Be particularly careful of bruised or damaged leaves.

Like European spinach, these greens can be steamed or stir-fried, added to salads raw, or cooked in soups or stews. One common method is to cook them in coconut milk with other vegetables and/or meats.
