Several varieties of long bean are available in the markets. Most have smooth green pods, which are up to 40cm (16 in.) in length. Colors vary from pale green to a deep brown.
Young long beans are commonly served raw with other vegetables. They can be blanched before adding them to mixed salads. They are also stir-fried, cooked in coconut milk, or added to soups or stew. Unlike the french green bean, the long bean does not have strings. (String beans are also available. They tend to have very tough strings.)
